To prepare this dish, you’ll need to ingredients as follows:
A lamb rack
Salt and pepper
Minced garlic
Minced rosemary
Zest of lemon
Fresh mint
Fresh lemon juice
1/2 cup olive oil

Firstly, season your lamb rack at both sides with salt and pepper while preheating your grill.
It is a matter of personal preference on using gas or charcoal grill. If you want your ribs come with smokey flavor, the Royal Gourmet charcoal grill CC1830F is recommended, as it comes with an offset smoker and the high efficient heat transfer system help imparting unique smokey flavor.
After seasoning, place the lamb rack on indirect heat zone of the grill, meat side down.
At the same time, prepare sauce with rest of the ingredients. Add minced garlic, rosemary, zest of lemon, fresh mint to olive oil, squeeze fresh lemon juice with half of the lemon. It doesn’t matter in which order you add the ingredients. Stir it to let the sauce have a good mixture.
Raise the lid and apply the sauce on the lamb rack, cook 20 minutes for each side, covered.
40 minutes later, move the lamb rack to the high heat zone and let it sear for 2-3 minutes, baste some sauce again.
When the lamb rack is done, take it out of the grill, letting it rest for 10 minutes. Cut the rack into small “lamb lollipops”, and then it is time to enjoy!
Lamb has more intense flavor compared with other types of meat. As long as it is properly cooked, it is nothing but exceptionally delicious.
