Poulty
Eating turkeys is an important holiday tradition during Thanksgiving. But how to prepare a big holiday meal when oven space is crowded? Don't worry. Here we will bring you a recipe which allows you to cook the turkey on a grill! The steps are quite simple and easy, and the flavor is great, meat being tender, juicy and moist. The best part of it is that you can leave your oven free and cook something else. After trying this recipe out, many people say they will never cook the turkey in the oven again. It takes 3 hours and 45 minutes in total before you can enjoy the dish. It can yield around 18 servings.

12 pounds whole turkey
1 teaspoon Italian seasoning
1 tablespoon vegetable oil
Salt and pepper to taste
Prepare an outdoor grill at indirect medium-high heat.
Rinse turkey thoroughly and keep patting it until it becomes dry.
Deal with turkey. Firstly, turn its wings back to hold neck skin in place. Secondly, return legs to tucked position. Finally, brush turkey generously with oil, and season both inside and out with Italian seasonings, salt and pepper.
Now it's time to grill. Place turkey on a metal grate inside a large roasting pan. Remember to keep its breast side up. Then arrange pan on the prepared grill. Usually we spend 2-3 hours grilling it, until the internal thigh temperature reads 180 degrees F (85 degrees C). Until then it's time to remove turkey from the grill. Remember to let it rest for 15 minutes before carving.
Tips:
1. Aluminum foil can be used to cover the turkey so as to keep food moist, cook it evenly and make it easier for cleanup.
2. By placing a metal pan under the turkey inside the roasting pan, you can collect the turkey drippings which can be used to prepare a gravy. Remember to mix in about 1/2 cup water or more if necessary so as to prevent drippings from scorching. Remember to remove the pan 30 minutes before the turkey cooking is done.
