Grilled Shrimp with Mango Salad

 

This grilled shrimp recipe is great for summer. The natural sweetness from shrimps, the sweet and sour taste from mango, and the freshness from vegetables are just the perfect balance in flavor.

It’s healthy and easy to make, and most importantly, very delicious. As the summer is on and the weather is pleasant, it’s time to do some magic with your backyard grill.

 

Ingredients you’ll need:

Shrimps

1 mango

1/2 avocado

1/2 tsp salt

1/2 tsp ground black pepper

1/4 cup olive oil

1 tbsp honey

3 tbsp orange juice

1/2 cup sliced onion

2 tbsp chopped cilantro

Mix the olive oil, orange juice, cilantro, honey, salt and pepper in a small bowl. Whisk to a good combine. Put the mixture aside for later use.

 

Get your shrimps cleaned and deveined, simply sprinkle a pinch of salt and ground pepper.

 

Preheat your Royal Gourmet grill, lightly oil the grill grates.

 

In order to prevent the shrimps from falling down the grill, it’s suggested to grill them in skewers. Thread about 4-5 shrimps onto each Royal Gourmet stainless steel skewer.

 

Place the shrimp skewers on grates over high heat, grill 2 minutes for each side.

 

Meanwhile, you can prepare your mango and avocado. To give this salad more smokey flavor, it’s wise to grill the mango and the avocado as well. If you cut them into chunks in advance, it’ll be really hard to grill. Chunks will fall down and they might be overcooked very soon. Therefore, cut the mango and avocado in halves, place them on grates with the cut side down.

  

Different from grilling meat and seafood, it doesn’t require long time to grill fruit. The idea is to caramelize and bring out the natural flavor. About 1 minute on each side is fine.

 

The mango, avocado as well as the onions have got the beautiful grill marks.

 

Cut the mango and avocado into chunks and slice the onion.

 

Take the nicely grilled shrimps off the skewers. Place them in a platter with sliced onion, mango and avocado chunks.

 

Top with the orange juice mixture, toss well until all the ingredients are well mixed.

 

The tasty grilled shrimp with mango salad is easily done. Yellow from mango, pink from shrimps, green from avocado and cilantro, purple from onion, plus that lovely grill marks, the salad comes with various color and will make you mouth watering in no time.
