1 pound big shrimps (of any kind), peeled and deveined
1/4 cup fresh lime juice
1/4 cup olive oil
1/4 cup hot sauce
1 tsp paprika
1 tbsp minced garlic
1/4 cup chopped parsley
freshly ground black pepper
1 tbsp kosher salt, or to taste
some lime wedges, for garnish
some soaked wooden skewers
Put all the seasonings into a glass bowl and whisk them well. Throw the shrimps in and rub them evenly over until they get finely coated. Rest for 1-2 hours at room temperature.
Poke the shrimps through skewers, and rest them suspended for about 10 minutes until there are no more drips of marinade. During that time you can preheat the grill to a medium heat and oil the grate before grilling.
Place the skewers above the hottest area and cook them 3 minutes per side.
Transfer skewers to a plate and remove shrimps from the skewers, array them well and edge with lime wedges. Serve warm.
As shrimps can be easily overcooked, you must be patient not to cook it for a long time in the grill.
