Smoked Chicken Quarters


Sunday afternoon is for smoking. Lovely weather, cold beer, friends and family, and mouthwatering meat, nothing could be more perfect.

Chicken is probably the meat that everybody loves. In today’s recipe, we are going to smoke chicken quarters with applewood. The chicken will come with unique wood flavor, juicy, tender and delicious. You won’t want to miss that.



Ingredients you’ll need:

Chicken quarters

Italian seasoning

1 tsp garlic powder

1 tsp ground pepper

Salt to taste

A stem of fresh rosemary

1 cup Olive oil

1/4 cup vinegar

Some limes

Your favourite BBQ sauce



Tools you’ll need:

Royal Gourmet Barbecue Tongs

Royal Gourmet Silicone Barbecue Brush

Royal Gourmet Wood Chips Smoker Box



Grill recommended:

Royal Gourmet CC1830F Charcoal Grill with Offset Smoker



Chicken quarter, namely, is 1/4 of a whole chicken. Here we are going to use leg quarters, which contain a thigh and portion of the back.


Mix the olive oil, Italian seasoning, garlic powder, vinegar, salt and pepper. Whisk to combine.

Take a Ziploc bag and put chicken quarters as well as the oil mixture, drop the fresh rosemary to add some fresh flavor.


Close the Ziploc bag and make the leg quarters mix well with the marinade, refrigerate for 6 hours up to overnight.


Smoking is actually not something hard to achieve. All you need is the just the patience.

Light up the charcoals and pour them carefully in the offset smoker box of Royal Gourmet CC1830F, throw some soaked applewood chips in the charcoals.

For those who are using gas grills, you can still do smoking with Royal Gourmet wood chips smoker box, though the flavor delivered may not be so good as the smoker does. Fill the smoker box with soaked applewood chips, and place it over direct heat.


With Royal Gourmet extra-long barbecue tongs, place the leg quarters on grates over indirect heat (275-300 Fahrenheit), covered, and let the grill do its magic.


Don’t forget to place a water pan to keep the chicken moist.


While the low-and-slow cooking is going on, spray apple juice every 45 minutes, in order to keep the moisture and flavor.


Open the lid about 3 hours later, and you’ll see beautifully cooked chicken quarters in grill. The applewood smoked chicken quarter is almost done. (I know it’s appealing already.)


Baste the leg quarters with your favourite barbecue sauce. Put the lid down and let them cook for 30 minutes. Then flip once, baste and cook for another 30 minutes.


Rest the smoked chicken for 15 minutes. Drizzle with fresh lime juice and serve with rice or salad.


Smoking is a cooking method which requires plenty of time. However, you will know the waiting is worth the moment when you tasted the tender, juicy and flavorful chicken quarter. Unique wood flavor comes along with exceptionally delicious meat, and your perfect weekend is then completed.
