Grilled Chicken Caesar Salad

  

For grilling lovers, everything can be cooked in a grill, including salad. During the home barbecue party or just a casual backyard gathering, a salad perfectly meets the need when someone is looking for a light meal.

 

Caesar salad is probably the most well-known one. You can find Caesar salad from almost every restaurant, which is because it’s just so classic and popular. Imagine when the romaine leaves are charred slightly but stay fresh and the croutons are so crispy with unique smokey flavor. The Caesar salad made in a grill is actually nothing but phenomenal.

 

Obviously, today’s recipe is about chicken Caesar salad.

 

Ingredients you’ll need:

Chicken breast

Romaine lettuce

Sliced baguette

Finely grated Parmesan cheese

Kosher salt

Black pepper

Rosemary

Extra-virgin olive oil

Anchovy paste

Mayonnaise

Dijon mustard

Minced garlic

Yogurt

Fresh lemon juice

Firstly, start with the chicken breast. There’s no need of complicated seasonings or marinades, simply sprinkle olive oil, salt, pepper and rosemary and give the chicken a good massage. Let the chicken breast marinate meanwhile heat up the grill, medium high.

 

Place the chicken breast in grill over direct heat, and grill it for about 5 minutes per side, flip once.

 

At the same time, you can start making your own dressing. Take a bowl and add olive oil (5 tbsp), mayonnaise (1 tbsp), yogurt (2 tbsp), mustard (1 tbsp), anchovy paste (a little), minced garlic (2 cloves), finely grated parmesan cheese, and freshly squeezed juice from a lemon. Whisk the ingredients to a good combine. A delicious Caesar salad dressing is easily done.

 

Use Royal Gourmet barbecue tongs to transfer the chicken breast to a plate once it’s done. Cut the romaine lettuce into half and slice the baguette to pieces. Place the romaine and baguette on grates, giving them lovely grilling marks. Don’t forget to lightly brush some oil on romaine and baguette before grilling.

About 2 minutes later, when the romaine leaves are slightly charred and the baguette pieces become crispy, take them out to cutting board.

 

Cut the romaine lettuce to the sizes you like, as well as the grilled baguette and chicken breast.

 

Take a large bowl, add the romaine, chicken, crouton accordingly. Dress with the dressing you’ve made, and give them a good toss.

 

If you are going to serve the salad to your friends or family, you can take another plate and get some well-tossed Caesar salad, with some dressing again on the top.

 

Next time when you are in the mood of something healthy or light, raise up your grill lid, try this grilled chicken Caesar salad. It is very likely to be the greatest Caesar salad you’ve ever had.
