Red or green pepper

Pineapple chunks

Fresh lemon juice

Olive oil

Salt

Fresh ground pepper

Cumin powder

Paprika

Red chili powder

Utensil you’ll need:

Royal Gourmet Stainless Steel BBQ skewers

The reasons of using these stainless steel skewers instead of traditional wood skewers are as follows:

1.      You’ll have to soak the wood skewers for at least half and hour before grilling, preventing the skewers from getting burnt, while the metal skewers help saving you lots of time.

2.      Stainless steel skewers are made for long-term use. You can wash and reuse them time after time.

3.      When the heat hits the metal, it actually helps cooking from inside out, so your meat will be cooked faster and more evenly.

Dry rub

Have a good mix of salt, pepper, cumin powder, paprika and red chili powder. Of course, you can customize the amount of chili powder according to your heat preference. Here we recommend dry rub, since it’s faster to lend the flavor to chicken. Sprinkle the rub on chicken cube and mix them well, let the chicken rest for 20-30 minutes.

Cut the onion, pepper, and pineapple chunks into similar-sized pieces and sprinkle some dry rubs as well. Alternately thread the vegetables, chicken and pineapple.

Preheat the grill, grease the grates with olive oil and place the skewers on it. Cook over medium heat, 4-5 minutes for each side, covered. The last minutes before skewers are done, basting some fresh lemon juice, which will impart a refreshing flavor to the skewers.
